Tabule with mint, pine nut oil and pine nuts
- Couscous 400 g
- pine nut oil 100 ml
- Water 450 ml
- Pine nuts 50 g
- Garlic 15g
- Light raisins 70 g
- Red onion 70g
- Fresh mint 20 g
- Cucumbers 250 g
- Parsley 30 g
- Lemon juice 40 ml
- Green salad to taste
- Freshly ground black pepper to taste
- Salt to taste
- Cover couscous with oil. To do this, lay it out on a flat surface, add half of pine nut oil and thoroughly mix it with your hands. Pour just boiled water on top of couscous, cover it with cling film and leave until the water is absorbed.
- Finely chop mint, parsley garlic and onions, cut tomatoes and cucumbers into cubes. Lightly roast the pine nuts. Mix all the ingredients (except lemon juice), put in the fridge for about an hour until the aroma of the herbs develops. Right before serving, add remained pine nut oil, salt, pepper to taste.
- Serve in a large bowl or plate with lettuce and lemon slices.
