Salad of lettuce, radish and pine nuts with citrus dressing
- Pine nut oil ¼ cup
- Lemon Peel ¼ tsp
- Orange peel ¼ tsp
- Orange juice 1 tablespoon
- Lemon juice 1 tablespoon
- Red leaf lettuce 450g
- Radish 6 pieces
- Pine nuts 30 g
- In a large bowl, combine pine nut oil, lemon and orange zest and citrus juices. Add 0.25 teaspoons of salt and 0.25 teaspoons of pepper. Stir until the salt dissolves.
- Add lettuce leaves and sliced radishes. Stir, sprinkle with nuts and serve.
