Salad of lettuce, radish and pine nuts with citrus dressing


  • Pine nut oil ¼ cup
  • Lemon Peel ¼ tsp
  • Orange peel ¼ tsp
  • Orange juice 1 tablespoon
  • Lemon juice 1 tablespoon
  • Red leaf lettuce 450g
  • Radish 6 pieces
  • Pine nuts 30 g

Cooking Instructions:

  1. In a large bowl, combine pine nut oil, lemon and orange zest and citrus juices. Add 0.25 teaspoons of salt and 0.25 teaspoons of pepper. Stir until the salt dissolves.
  2. Add lettuce leaves and sliced radishes. Stir, sprinkle with nuts and serve.
